Sammy Kershaw's Sweet Potato Biscuits
Something a little different for your holiday table

1-cup Bruce's Yams (mashed)
3 cups all-purpose flour
3/4 cup brown sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 teaspoon cinnamon

1 teaspoon ginger
1 teaspoon all spice
1/2 cup butter
1/2 cup chopped pecans
1/2 cup milk

Directions:
Measure flour, brown sugar, baking powder, salt, cinnamon, ginger, and all spice and put into a mixing bowl. Cut butter into small pieces. Add to the dry ingredients in the mixing bowl. Combine milk and yams and add mixture to the mixing bowl. Add chopped pecans. With your hands, knead the mixture until it is one smooth mass of dough. Use a rolling pin to roll the dough to a 1Ú2 inch thickness on a floured surface. Cut the rolled out dough with a 2 inch round cookie cutter. Place on a buttered baking sheet. Leave 2 inches between biscuits. Bake at 450 degrees for approximately 10-15 minutes or until done. Biscuits will be lightly browned when done. Cool on a baking rack. Makes 10-12 biscuits: 2-1/4 in.
