   Printed from SammyKershaw.com

1 boneless beef sirloin steak (about 1.5 lbs.), cut 1.5 inch thick
2 Tbs. chopped fresh cilantro
2 Tbs. virgin olive oil
1 Tbs. Louisiana Hot Sauce

1 clove garlic
1/4 to 1/2 tsp. crushed red pepper (optional)
2 large onions (preferably Vidalia) cut into quarters
1 large red bell pepper, cut into 1-inch pieces
Salt to taste

Directions:
Trim fat from beef steak. Cut steak into 1-1.5 inches pieces. Combine cilantro, oil, Louisiana Hot Sauce, garlic and red pepper in zip lock bag. Add beef, toss to coat. Marinate if you have time for 1 hour. Alternately thread beef, red bell pepper, and onion onto metal skewers. Place kabobs on grid over medium coals or medium heat gas grill. Grill uncovered for 8-10 minutes for medium-rare, turning occasionally. Season with salt if desired. Makes 6 servings. Serve with fresh salad and hot French bread!

Makes 4 servings.
