Sammy's Cheese & Sausage Dip
A great party dip!!

1lb Heavy smoked andoville sausage, diced
... (can substitute smoked sausage)
2 lb Velvetta cheese at room temperature, diced
1 12 oz jar of Bruce's or Louisiana Brand
...jalapenos, seeded and chopped
1/4 cup butter
1 cup onions

1/4 cup copped celery
1/4 cup chopped red bell pepper
2 tbls diced garlic
4 cups mayonnaise
salt & pepper to taste
The Original Louisiana Hot Sauce to taste
1/4 cup chopped parsley

Directions:
1. In a heavy saute pan, melt butter over medium - high heat.
2. Add onions, celery, bell pepper, garlic and andouille. Saute until vegetables wilt.
3. Add jalapenos and saute 2-3 minutes. Remove from heat and allow to cool.
4. Transfer mixture to foods processor. Using metal blade, blend until smooth.
5. Pour mixture into large mixing bowl and add cheese and mayonnaise.
6. Using a wire whisk, whip until smooth.
7. Season using salt and pepper and
The Original Louisiana Hot Sauce. Sprinkle in parsley.
8.Transfer to serving bowl and heat to serving temperature in microwave. Dip may also be served cold.
