Cajun Crawfish

lb. of crawfish
(ask at your local grocer or fish market)
1/2 quart red pepper
1 box of salt
|
5 lb. onions
5 lb. (small) potatoes
optional: Mushrooms, celery, carrots, corn,
2 sticks of butter |
Directions:
In Cajun Country we divide the 35 lb. into two boiling times

the second batch is definitely the "spiced" batch...
The children eat first then the adults...
Bring
water to a boil and add butter and three tablespoons of
red pepper, Add , onions, potatoes ... then boil for 10
minutes. ĘThen add the corn.. etc. the optional and boil
till the potatoes are soft. ĘDish out potatoes and then
add the additional seasonings and the crawfish. Boil first
batch for 20 minutes.Then second batch. The longer the seasonings
boil the spicier the crawfish. Then enjoy!!
